Try It: Pumpkin Oat Energy Bites Recipe

I don’t know about you, but for me, nothing says fall quite like pumpkin-flavored anything! That’s why Quaker® Oats’ Pumpkin Oat Energy Bites are the perfect tasty treat for you and your little one to snack on as the leaves change colors and the temperatures cool down.

Not only is this recipe quick and simple, but it’s also chock-full of wholesome goodness that’s guaranteed to satisfy even the pickiest palates. (Trust me: They were a big hit with my finicky 4-year-old!) All you need to make these tasty treats are five delicious ingredients and 15 minutes of your day.

This is a great opportunity to have your kiddo help you out in the kitchen! Make sure to blend the ingredients well before rolling the mixture into 1-inch balls. Personally, I just laid out parchment paper and let my daughter have at it. Not only was the end result incredibly appetizing (and really satisfied my pumpkin craving), but we also had fun enjoying a new food together.

P.S. This scrumptious on-the-go snack is perfect for lunchboxes, in the car, or to take to the playground!

Recipe: Quaker® Oats Pumpkin Oat Energy Bites

Prep Time: 15 minutes
Total Time: 15 minutes’ prep + time to chill
Yields: 24

Ingredients:

  • 2 1/4 c. Quaker® Oats (Quick or Old-Fashioned Oats, uncooked)
  • 1/4 c. almond flour or oat flour
    • Want to make your own oat flour? See our cooking note below.
  • ½-1 tsp. pumpkin pie spice
  • 3/4 c. puréed pumpkin
  • 3 Tbsp. honey

Directions:

  1. Combine the oats, almond or oat flour, and pumpkin pie spice in a large bowl. Stir to blend well.
  2. Add the puréed pumpkin and honey to the bowl.
  3. Stir until ingredients are well-blended.
  4. If you’d like the energy bites a little less sweet, add salt to taste.
  5. Shape the mixture into 24 balls, about 1 inch in diameter, and place in a container.
  6. Cover the container and refrigerate the energy bites until they’re chilled.
  7. If you have any energy bites left over, make sure to store them in the refrigerator, covered.

Cooking Note:

To make your own oat flour, simply place 1/4 cup of Quaker® Oats’ Quick or Old-Fashioned Oats in a blender or food processor. Process the oats until they’re finely ground.
