I have worked part-time at a summer camp for the past eight summers (and full-time for the past two years). My primary job there has been to make food for kids who have food allergies or intolerances. Celiac disease is something I encounter on the regular and dairy allergies are also very common. Making food that tastes good for vegetarians and vegans in pretty easy thanks to Mom and Dad who started our family on a dietary journey as a result of my own reactions to certain types of food when I was a kid. I've served many kids with a variety of dietary needs, especially in the two years when this job became full-time for me, and thankfully, they almost always leave camp smiling, excited that they didn't have to live off of Udi's bread or water for a week or two.
