Hello, I started this group because 2 of my 3 children have Celiac and are very picky eaters. I worry about getting them the right nutrition, and feeding them 'acceptable' things in and out of the home. My daughter has her 3rd Bday coming up this weekend and I am going to attempt to make a gluten free cake that is edible and acceptable! Does anyone have any recipes that are proven amongst children?

I have Celiac disease as well as our 3 year old son and we're not sure yet if our 7 month old daughter has it. It took two years before my son started showing the same symptoms as me and it's been a world of difference since making the gluten free leap but it sure isn't easy! I feel terrible because children in his preschool class eat cake for other children's birthdays yet he has to sit there and eat grapes or the like (I'm not sure if I should say something to the teachers). We make our own bread, deserts, etc. To buy it already made is so expensive! Do you have a flour that you use? I've come across a few and use one that is a mixture of potato starch, almond meal, etc and I think it works pretty good. My next endeavor is to make banana bread so we'll see how it goes. I always worry about him getting enough fiber. He likes gluten free rice cakes and dips them in Nutella or peanut butter. For lunch we do a lot of lettuce wraps or sandwiches with the gluten free bread. I know my post is way past your daughter's birthday and I hope you found a good recipe. I haven't tried a cake yet, just cookies and brownies. I'm sure if you just follow any regular home made cake recipe and substituted with the gluten free flour it would turn out fine. Tonight we tried chocolate truffle brownies by The Gluten Free Pantry and it was pretty good, our son loved it.

I also wanted to add I've heard that a good way to get some more fiber in is to sneak flaxseed meal into cookies or whatever else it is you make. I put some in waffles and pancakes and our son can't tell the difference.

thanks! I hadn't considered Flaxseed! Most of the cake mixes I've tried aren't very good. However, Betty Crocker's new gluten free chocolate cake isnt' too bad. I also made the cake on the back of the Hershey's cocoa powder box, using Bob's Gluten Free all purpose flour. For my daughter's preschool, I make cupcakes in advance and stick a few in their freezer so they can pull from them whenever there is a special occasion. I've had GREAT success with all the Gluten Free Brownie mixes...YUM!! Lots of comments that they are better than regular brownies too. Now I'm looking for a good bread. Any suggestions? I found a premade bread at Whole Foods that got thumbs up from the girls, but it's soooo expensive. Looking for a bread mix or recipe now.
