What are your biggest challenges with maintaining a Gluten Free Casein Free Dairy Free Diet?

I am going through a hard time right now b/c i discovered that my son has been getting some gluten through the chicken bouillon i use in some of our cooking. Please beware and call manufacturers of products to clarify. Wheat Gluten Dairy-Casein can be present in products as they can be used as preservative or even used as an agent to aid the production method. These ingredients are bad for our kids and we can never be too careful. Question: Are any of the moms in this group asthmatic? Let us know.

I cook everything from scratch and only add salt and pepper and some garlic with olive/canola oil. all meats are organic. All veggies are pesticide free or organic and fresh or frozen. My son s doing very well. He has been on this diet for 1.5 yrs. He is 4 yrs old and about to lose his autism diagnosis. Don't give up on the diet. He is also on the SCD diet which has done wonders. He is lately able to tolerate some of the forbidden foods. My son also went through being very thin at the onset of the diet. It took almost a year to get this down. Dont give up! It really helps but only if you are very strict and 100% gluten free, casein free.

Just thought i'd chime in, SCD is phenomenal and surely does wanders if you're experiencing behavioral & gut issues. Thanks for telling us about it Marie!!!!

My son has been on the gf/cf diet since he was 6 years old and it helps to this day.
He will be 20 years old in August of this year.
I recently began to cut out as much sugar in his diet as possible and it has REALLY made a difference.
Removing sugar has made more of a difference than the diet for him.
He's not completely off of it, but down sized tremendously.
