I'm not an expert but if you are working off the books then you don't get to collect taxes, you owe the IRS at the end of the year. If you don't pay taxes on the money you make then nothing is being paid into your social security which means your check when you retire will be very low.
You can ask them for a 1099 form. It releases them of having to pay the taxes, they can report it, as you're an independent contractor, and you can pay your taxes on the earnings. Everything is above board, and okay for the IRS
If you file a 1099 as an independent contractor, your taxes you have to pay are much much higher, I believe double what you'd have to pay if you had a W-2 as a household employee. I wouldn't do a 1099 if I were you. Especially since you can hold your employer to the fact that you're legally a household employee which makes you entitled to a w-2.

Be sure to include expense for the money you made so your tax liability wont be so high. You can also claim mileage and supplies.
